Norfolk’s top restaurateurs, professional chefs and hoteliers, joined the Hotel School at City College Norwich on Wednesday 8th February along with lead suppliers of organic, free range and local produce to give support to the college ‘Passion to Inspire’ competition.

The professionals guided the students in the kitchen, before judging their dishes, were Nick Mills (Managing Director) and Chris Busby (Executive Chef) from Brasted’s, Eric Snaith (Head Chef, Titchwell Manor Hotel), Philip Milner (Head Chef, Orange Tree) and Roger Hickman (Head Chef, Hickman’s Restaurant).

Nick Mills, Managing Director of Brasted’s, commented:

“There were some very complex dishes for the students to do at the competition. It was really, really, pleasant to see such great passion in the young people coming through into the industry.”

“I think it’s very important that the students get to know and understand everything about what goes into the industry. Including the front of house aspects as well as the kitchen and the supply side, right through to the end with the customer experience.”

Seven teams of student chefs were put through their paces in the college kitchens. They went head to head in a ‘Master Chef’ competition each preparing a two course meal in just an hour and a half!

Students were challenged to come up with their own dishes, featuring a pork, duck, chicken or fish-based main course, followed by an egg-based dessert, all under the expert eye of the professionals who were on hand to provide advice and support.

On Friday 10th December Nick and Buzz were honored to be asked to judge The Rotary Young Chef Competition of Norfolk at the City of Norwich School. This annual competition is open to students in full time secondary education and who are aged 17 years or under. The finalists were asked to prepare a three course meal for 2 people in 2 hours, plus 30 minutes prior set up time and all within a budget of £15.00. The winner was 16 year old Elise Mabbutt from Aylsham High School.

Nick and Buzz were very impressed with the overall standard of food produced, but it was Elise’s innate kitchen skills, excellent time keeping and presentation of food that really set her apart from the competition. Elise will now join other regional winners in the district competition and who knows with some mentoring from Buzz & Martin (Brasted’s Head Chef) earn her place in the National Finals.

September is the start of an incredible season for food and to celebrate this ‘The Lloyd Addison Moveable Feast for Parkinson’s’ takes place in Norwich City Centre. It is a unique dining experience where over 600 Feasters enjoy the wares of Norwich’s finest restaurants. The essence of the moveable feast, created by Lloyd Addison, is that guests have their starter in one restaurant, then move on to another restaurant for main course and finally a different restaurant for pudding! Brasted’s Restaurant has participated for the last five years by creating the Framingham Pigot restaurant in the beautiful venue of Dragon Hall in King Street. 2010 was the third time in succession that Brasted’s was voted Best Restaurant by the feasters. The Moveable Feast has been going for 11 years and profits are donated to Parkinson’s UK. The 2010 event raised a massive £5,339.60 for the charity.
